Yeah, you read that right. I made bacon pancakes for breakfast one morning in an attempt to boost my mood before my medical/trauma lecture. They’re incredibly easy, and Jake the Dog (from Adventure Time) decided to stop by and give a handy little demo.
And for those of you who have no idea what the hell I’m talking about, here’s the gist of it. Cut slices of bacon in half and lay them out in a griddle with a few inches between each piece. Cook the bacon to about 90% of the way that you like it–I can’t stand crunchy bacon, so I let mine cook until it’s done but still a bit soft. While the bacon is cooking, mix up your pancake batter. I was feeling exceptionally lazy (it was 5:30 in the morning on a Tuesday, cut me some slack) so I just made good ol’ Aunt Jemima. When the bacon is cooked to your liking, pour a small amount of batter over each slice of bacon, and allow the pancakes to cook like normal. Flip them over when the bubbles at the edge of the pancake begin to set up, and then cook on the other side for a minute or two until they are just done. Eat them plain or douse them in the toppings of your choice–I used syrup and a tiny bit of cracked black pepper.
