BBQ Chicken Pizza

I’ve been on a pizza kick lately. Anyone up for some BBQ chicken pizza? It’s a great way to use up some leftover chicken.

Here’s what you’ll need:
1 recipe of your favorite pizza dough (my favorite is here on FH&H)
1/2 cup BBQ sauce (I used Sweet Baby Ray’s
1/2 red onion, chopped
1 lb mozzarella cheese
1 chicken breast, cooked and chopped

Roll out your dough and place it on your (greased) baking sheet. Spread the BBQ sauce over the top of the dough and sprinkle the cheese evenly on top. I’m picky about my cheeses so I just used mozzarella, but you can add a bit of cheddar too if you want. You can also swap half of the mozzarella for shredded gouda–it’s delicious, but my broke ass wasn’t making a run to the store for cheese. Arrange your chicken and red onion on top of the cheese.

Throw that baby into a 400 degree oven for 15 to 20 minutes or until the crust is golden brown. If you like your onions a bit more caramelized and your cheese brown and bubbly, turn on the broiler for just a few moments, but watch it carefully so you don’t burn the crust.

Take your pizza out of the oven and let it rest for a few minutes to allow your cheese and toppings to set up. If you try to cut it now, it’ll still taste fine, but the dough might tear and you’ll lose a lot of your toppings. Remove the pizza from your baking sheet and put it on your cutting board, and cut it into squares. Mine made 16 pieces, but you can cut yours to whatever size you desire. Sprinkle the top with a little bit of basil or parsley and serve with an ice cold beer. Enjoy!
